The day we got tired of average fries.
Guillaume and Giovanni spent more than ten years on the road.
France, Belgium, Luxembourg.
Traffic jams, parking lots, express lunches⦠and one unresolved mystery: Why is it so hard to find good fries?
Every lunchtime, it was a roulette game:
β sad bread,
β strange meat,
β and regrets 20 minutes later.
At some point, they told themselves: βItβs not possibleβ¦ nobody makes a real clean, serious, artisanal fries shop?β
Answer: No. Or only very rarely.
And thatβs where it all slipped. One simple sentence in the car:
β βWe should make one ourselves.β
β βYeah, right.β
β ββ¦ No, seriously.β
And they did.

Giovanni and Guillaume
Two enthusiasts of good food and authentic artisan fry shops, spent more than ten years traveling across France, Belgium and Luxembourg. After countless quick lunches and disappointing fries, they decided to create LβAtelier de la Frite: a clean, serious and fully artisan fry shop. Their mission: bring back the real crispy, generous and authentic fry.
The Farmer
The one who grows our potatoes, close to the local fields. A key partner who guarantees freshness, quality and respect for the land.
The Butcher
A passionate craftsman who selects and prepares the meats used in our recipes. Traceability, tenderness, respect for the product: the taste starts here.
The Baker
Every day he provides us with fresh, crispy bread specially crafted to accompany our dishes. An artisan who truly makes the difference.
π NINOVE: THE FIRST CHAPTER
LβAtelier de la Frite in Ninove ( Biezenstraat 29, 9400 Ninove, Belgique ) is the first of many. The starting point. The laboratory. The proof that we can reinvent the fries shop β seriously, cleanly, and with a lot of pleasure.
Others will follow. But Ninove is number 1. The pioneer. The beginning of an adventure that will smell like freshly cut fries for a long time.
